  • 4 Small Size Chicken Breast; Pounded Thin
  • 1 Cup AP Flour
  • 3 Tsp Salt
  • 2 Tsp Pepper
  • 2 Tsp Sage
  • 2 Tsp Garlic Powder
  • ½ Tsp Cayenne
  • 1 Tsp Smoked Paprika
  • 2 Eggs Beaten
  • ½ Cup Frank’s Red hot
  • 2 Cups Panko
  • 2 Cups Oil for Frying
  • 4 Grinder Rolls
  • Tomato Slices
  • Bacon Slices
  • Bleu Cheese Crumbles

Instructions

  1. Heat Oil in cast iron skillet over medium heat.
  2. Combine flour, salt & dried spices in a bowl.
  3. Beat eggs in a separate bowl. Add hot sauce to eggs.
  4. Place Panko in a bowl.
  5. Bread chicken by dusting first in flour.
  6. Remove ; dip in egg mixture.
  7. Cover with dry panko.
  8. Finish all four breasts.
  9. Fry in hot oil. Brown on both sides. Cook until internal temperature of 165⁰.
  10. Build Grinders to taste.
