Shopping List

  • 2 Cod Filets cut into 1/8
  • 1 Cup AP Flour
  • 2 TBSP Old Bay
  • 2 Eggs
  • ¼ Cup Dijon Mustard
  • 1 Cup Panko
  • 1 Tsp salt
  • 1 tsp Parsley
  • 2 Cups hot oil.

For the Spicy Caper Sauce

  • 1 Tbsp Dijon Mustard
  • ¼ Cup Mayo
  • 1 Tbsp Capers, Chopped
  • 1 Tsp Chives Chopped
  • 1 Tsp Garlic. Minced
  • 1 Tsp Lemon Juice
  • 1 Tsp Lemon Zest
  • ¼ Tsp Cayenne Pepper
  • Salt & Pepper To Taste

Instructions

  1. Heat Oil in cast iron skillet over medium heat. Combine flour and old bay in a bowl.
  2. Beat eggs in a separate bowl. Add Dijon mustard to eggs. Place Panko in a bowl. Add salt and parsley to panko. Bread cod by dusting first in flour.
  3. Remove; dip in egg mixture.
  4. Cover with dry panko. Finish all cod fritters.
  5. Fry in hot oil. Brown on both sides. 3-4 minutes. Cook until internal temperature of 155⁰.

Enjoy with tartar sauce or caper mayo.
