Shopping List

  • 2 Tbsp. Olive Oil
  • 2 Beets, Cooked Peeled & Quartered
  • 1 Clove Garlic, Smashed
  • ½ Cup Balsamic Vinegar
  • ¼ Cup Honey
  • Salt & Pepper to Taste
  • 2 Springs Fresh Thyme
  • 1 Bunch Fresh Chives Chopped
  • 4 oz. Log Goat Cheese
  • Baby Lettuces

Instructions

  1. Heat oil in pan. Sauté Beets.
  2. Add Garlic Clove. Deglaze with Balsamic Vinegar & Reduce by ½.
  3. Add honey, Thyme, Salt & Pepper.
  4. Arrange Lettuces on Platter. Top with warm beets and Goat Cheese. Garnish with Chives.
  5. Serve immediately.

Serves 4-6.
